Production techniques:
Obtained from a careful manual sorting of the bunches and from a soft pressing of the whole Chardonnay, Pinot Grigio and Pinot Bianco grapes (as per Valcalepio regulations).
Tasting notes:
Straw yellow color with greenish reflections, vinified alone; interesting fruity and characteristic bouquet with light hints of green apple and almond. and peppermint.
Rich, full taste with good tasting persistence with evident citrus notes. Wine recommended as a garnished aperitif.
It is also an excellent aperitif.
Pairings:
Excellent as a whole meal with the exception of furred game, particularly recommended with golden perch fillets, boiled blue trout, steamed sea bass, shrimps in aurora sauce, octopus salad, grilled monkfish, fried dogfish. Risottos and pastas with white sauces.

Tasting temperature: 8 – 10 degrees
