Organoleptic characteristics
A golden yellow to the eye, with an elegant chain of fine and persistent bubbles rising towards the surface of the glass. On an olfactory level, it releases notes of graphite, gentian and mint, in a cadenced and precise manner, encouraging you to sip.
On the palate it demonstrates a sinuous character, slender by a tropical fruit of fresh pineapple, followed by notes of mandarin and thyme, with a light spicy note of ginger that accompanies the long, pleasantly intense finish.

Pairings: Ideal for scallops au gratin, grilled and/or baked fish, at the table accompanied by robust sauces, Neapolitan-style fish soups, Livorno-style red mullet, squid ink risotto, soute' di veraci, sweet and sour capon salad.
